Recipe: delicate risotto with dried porcini mushrooms

Soak 20 grams of PAN dried porcini mushrooms in a bowl of warm milk for 15 minutes. In a pan stir fry a small finely chopped onion with butter, add the washed and wrung mushrooms and cook for about 20 minutes with a ladle of stock. Pour in 350 grams of rice, let it slowly fry until translucent, then cook it by adding ladlefuls of stock as the rice absorbs it. Remove from the heat and make creamy with some butter and grated Parmesan cheese.

Soak 40 grams of PAN dried porcini mushrooms in warm water for 20 minutes. In the meantime, chop a carrot, some celery and an onion and stir fry them gently with four tablespoons of olive oil. Add 400 grams of diced veal, salt and simmer for about 20 minutes. Add the porcini and cook a further 30 minutes.

Soak 30 grams of PAN dried porcini mushrooms in warm water for 15 minutes. In a pan stir fry a small finely chopped onion with olive oil and a slice of cooked ham cut into strips. Add the mushrooms with their sieved water. Simmer for 10-15 minutes, then pour in 400 grams of tinned tomatoes, season with some chili, 4 black olives cut into strips and salt. Cook 350 grams of pasta, drain it well and add the porcini sauce.

Recipe: baked sea basses with dried porcini mushrooms

Soak 10 grams of PAN dried porcini mushrooms in warm water for 20 minutes. In the meantime, clean 4 sea basses. Place a large sheet of parchment paper in a baking pan and sprinkle it with the porcinis, oregano, 10 small sliced tomatoes, garlic, parsley and olive oil. Place the sea basses over the mushrooms and wrap them completely in the paper. Cook at 200 degrees Celsius for about 20 minutes.

Recipe: chicken with mushrooms

Soak 10 grams of PAN dried porcini mushrooms only caps in warm water for 20 minutes. Take the skin off 600 grams of chicken pieces and cover them with flour. Stir fry in a pan a carrot and an onion with 5 tablespoons of olive oil, add the chicken pieces, salt and cook for 20 minutes. Add the mushrooms, some rosemary and half a glass of white wine, let it evaporate and then cook a further 30 minutes.

Recipe: dried porcini mushroom pizza

Prepare pizza according to the recipe and place it in a hot oven. (you can use frozen pizza). In the meantime, soak 10 grams of porcini mushrooms only caps in warm water for approx. 20 minutes. In a pan stir fry a clove of garlic with two tablespoons of olive oil, add the mushrooms, salt and brown for about 5 minutes. When the pizza is almost done, add the mushrooms with their cooking juices and cook another 2 minutes. Your pizza is now ready.
